Oat flour or rolled oats ground in food processor
2 cups Whole Wheat flour, 2 cups warm water with 2 tsp yeast, let stand 2 - 4 days, longer is better.
When making bread use
4.25 cups bread flour, I have substituted 1 cup of ground rolled oats for one cup of flour
1 Tbsp yeast
1 tsp sea salt
add 1 1/2 cups starter & 1 cup warm water to dry ingredients, till dough pulls from side of bowl, Knead 8-10 minutes, let rise.
Divide into loaves or rolls, let rise till double in size,
Bake at 400 for 30-35 minutes.
Serving Size: 40 Approximately
