Low Carb Strawberry Cheesecake Cups

Introduction

This is a great and quick dessert to whip up. I love Cheesecake and this taste just as good as any Cheesecake minus the guilt (and the crust of course). It's low in fat and less than 3 grams of Carbs per serving. This is a great and quick dessert to whip up. Number of Servings: 10

Ingredients

    2-8 oz pkgs of Neufchatel Cheese
    2 Large Eggs
    1/2 cup of any sugar substitute (splenda, stevia, etc.)
    1/2 tsp Vanilla Extract
    1/4 tsp Lemon Extract
    1 tbsp Sugar Free JELLO mix (or any other flavor you desire)

Directions

Preheat Oven to 350 degrees.

(1) Mix Neufchatel Cheese with mixxer on med-high until smooth and creamy.
(2) Add eggs, one at a time and continue to mix until well blended.
(3) Add the sugar, extracts and JELLO powder and mix until well blended. Your mixture will turn pink (color depends on flavor of JELLO used, will turn pink for strawberry).
(4) Line regular size muffin pan with muffin papers and fill with cheesecake batter until 3/4 full.
(5) Place in over and cook for approximtely 20 minutes until center of cheesecakes are set.
(6) Remove from oven and remove individual cakes from pan and let cool on cooling rack for 10-15 minutes. Place in the fridge for 2 hours or overnight.
