Low Cal Potato Soup

Introduction

Warm and Hearty low cal potato soup to keep you toasty and not add to the waist line. Warm and Hearty low cal potato soup to keep you toasty and not add to the waist line.
Number of Servings: 8

Ingredients

    6 cups diced potatoes, 2 cups dices onions, 2 cups diced celery, a clove of garlic, a tbsp of I can't believe it's not butter, tbsp of sea salt, tbsp of fresh ground pepper, 6 cups of filtered tap water, weight watchers shredded cheese, fresh chives, 2 cups 1% milk.


Directions

Add all ingredients except milk and chives bring to a rolling boil for ten minutes then allow to simmer on low for one hour. Add milk and simmer for 20 minutes. Add shredded cheese and chives to the top and serve. If you like you soup a bit thicker try adding just a touch of potato flakes to the broth just before serving but don't forget to adjust the recipe to allow for the added calories.

Serving Size: makes 8-10 1 cup servings
