Whole Wheat Cinnamon Rolls, 90 minute

Introduction

Oddly enough, adding 30 minutes to rise, it still doesn't add up to 90 minutes.

Glaze recipe not included.

Ingredients

    Original Recipe Yield: 12 rolls

Muffin cups, 12 each, (grease as desired, optional)

Milk, 1% (any will do), 3/4 cup
Butter, softened, 1/2 cup and 1/4 cup

Whole Wheat Flour, 2-1/4 cups and 1 cup
    Yeast, active dry, 1 package
    Granulated Sugar, 1/4 cup
    Salt, 1/4 tsp

    Water, 1/4 cup
    Egg, 1 large

    Brown Sugar, 0.50 cup, packed
    Cinnamon, ground, 1 tbsp
    Butter, 1/4 cup

    Optional:
Raisins and/or walnuts, 1/2 cup total, (not included in nutrition information)

375 degree F oven, preheat near end of 30 minute rise.

Directions

1. Heat the milk in a small saucepan until it bubbles, remove from heat. Mix in 1/4 cup butter, stir until melted. Let cool until lukewarm.

2. In a large mixing bowl, combine just 2-1/4 cup flour, yeast, sugar and salt; mix well. Add water, egg and the cooled milk mixture; beat well. Add the remaining cup of flour, 1/2 cup at a time, stirring well after each addition. When the dough has just pulled together, turn it out onto a lightly floured surface and knead until smooth, about 5 minutes.

3. Cover the dough with a damp cloth and let rest for 10 minutes. Meanwhile, in a small bowl, mix together brown sugar, cinnamon, and remaining 1/2 cup softened butter.

4. Roll out dough into a 12x9 inch rectangle. Spread dough with cinnamon mixture. Sprinkle with raisins if desired. Roll up dough and pinch seam to seal. Cut into 12 equal size rolls and place in 12 lightly greased muffin cups (or baking pan). Cover and let rise until doubled, about 30 minutes.

5. Preheat oven to 375 degrees F (190 degrees C). Bake in the preheated oven for 20 minutes, or until browned. Remove from muffin cups to cool. Serve warm.
