Pureed Potato Leek Soup

Introduction

Number of Servings: 5

Ingredients

    2 Tablespoons of unsalted butter
    1 cup onion, chopped
    2 cups leeks, chopped, white and light green parts only
    1 tsp, course sea salt
    3 cups potatoes, Red or Yukon, diced, skin on
    4 cups Roasted Vegetable Stock
    1 sprig thyme
    1 bay leaf
    10 sprigs parsley, chopped

Directions

1) heat pot, melt butter
2) add onion and leeks and salt, cook until softened
3) add potatoes, thyme and bay leaf, mix
4) add stock
5) bring to a gentle simmer and cook covered for 15-30 mins, until potatoes and leeks are soft
6) remove the thyme and bay leaf
7) carefully puree soup in a mixer or use a stick blender
8) serve with some parsley sprinkled on top
