2 Tbsp Olive Oil 2 Medium onions, diced 2 Carrots, cut into 2 inch sections and sliced into sticks 3 small scallions chopped 1/2 cup green beans, cut into 1 inch sections 3 cups of chopped broccoli 2 Tbsp soy sauce
Chop all vegetables. Put 2 Tbsp of olive oil in a large skillet and heat on medium heat. Add the vegetables one at a time, starting with the onions and ending with the broccoli. Stir as each vegetable is added to coat with oil and mix the veggies up. Cover, and cook for 5-7 minutes, uncovering to stir at least once. Add 2 Tbsp of soy sauce, stir to coat vegetables, and turn off heat. Let stand at least two minutes before serving.
Serving Size: Makes 6 one cup servings.
