Bacon Wrapped Chicken-Healthy Style

Introduction

This is one of my family's favorite recipies, healthy style. I used to make it with peppered bacon, regular cream cheese, and without the Green Peppers; now, with a few tweaks, we can imbibe in a favorite dinner without the guilt. Number of Servings: 6

Ingredients

    3 chicken breasts, boneless & skinless
    12 slices of turkey bacon
    1 brick of reduced fat cream cheese
    1/2 c. scallions, finely chopped
    1/2 c. green peppers, finely chopped

Directions

Preheat oven to 425 degrees. Set out cream cheese and allow to soften to room temperature. Slice chicken breasts in half. Chop scallions and green peppers. Mix scallions and green peppers into softened cream cheese. Place 1/6 of cream cheese mixture on center of each half chicken breast. Wrap chicken breast around mixture, then take 2 slices of turkey bacon for each serving and wrap them in opposing directions around the chicken and cream cheese. Fix in place with 2-3 toothpicks and place on cookie sheet. Bake chicken for 20 minutes at 425 degrees. 1 serving = 1 wrapped 1/2 breast.

Serving Size: makes 6 pieces.
