Chorizo Mini Quiches

Ingredients

2 medium sized links of Chorizo
5 large eggs
1/4 cup chopped onions
1/4 cup chopped green bell peppers
1 cup chopped spinach
3/4 cup shredded cheddar cheese
Directions
Preheat oven to 350.
Saute chorizo in a pan until cooked through and no longer pink. Add onion and green pepper, and cook for about 1-2 minutes. Add spinach, and cook for another minute. Set aside meat mixture.
Whisk together eggs and cheddar cheese in a bowl until blended well.
Spray a mini muffin pan with non-stick spray.
Fill each muffin space about half full with meat mixture, then add about 2 teaspoons of egg mixture to each muffin space. The space should be about half full to prevent overflowing.
Bake in oven about 20-25 minutes. Let the quiches cool a few minutes, then pop them out of the tin. Store in fridge and reheat for about 15 seconds when ready to eat.
