Introduction

This recipe is modified from Hungry Girl's e-mail. I omitted the chicken, changed some amounts so as not to be left with 1/2 cans of ingredients and added some spice. Enjoy! Number of Servings: 12

Ingredients

    PAM cooking spray
    Celery, raw, 1.5 cup, diced
    Vidalia onion, raw 1 medium onion, 1 serving
    1 T chile powder
    1/2 t cocoa powder
    1/2 t cumin
    pinch cayenne
    Chicken Broth, 4 cup (8 fl oz)
    *Green Chile Enchilada Sauce, 3.5 cup
    Pumpkin, canned, without salt, 2 cup
    Yellow Sweet Corn, Canned, 1 can (12 oz) yields
    *Green Chiles (Whole), 6 oz

Directions

Sautee chopped onion & celery in cooking spray until soft
Add spices
Add broth & enchilada sauce - bring to boil and turn down to medium
stir in pumpkin, corn, & green chiles
simmer10-15 minutes to let flavors blend

Serving Size: makes 12 1-cup servings
