Homestyle Beef Barley Soup

Introduction

This is real food made from scratch and using the best quality ingredients available. It takes some time but is well worth it. This is real food made from scratch and using the best quality ingredients available. It takes some time but is well worth it.
Number of Servings: 10

Ingredients

    2 T Olive oil
    2 c chopped onions
    2 c chopped celery
    2 c chopped carrots
    8 c Knorr Simply Beef Broth
    522 g roast beef (precooked or left over)
    1/2 c pot or pearl barley
    1 c frozen peas
    Salt, Pepper, Garlic Powder, Thyme to taste
    2 or 3 Bay leaves
    dash worcestershire sauce


Directions

Saute onion, celery & carrot in olive oil. Add broth & beef & bring to a boil. Add everything else and simmer for an hour or two. You will need to add water as it cooks and evaporates but this ends up making about 10 cups of soup. Calorie count is based on 1 cup of soup. Delish.
