Hominy and Lima Bean Casserole

Ingredients

    1 can baby limas
    2 cans hominy
    4 ounce container of Low Fat Daisy Sour Cream
    1 medium onion chopped fine
    1 tablespoon butter
    1 tablespoon canola
    3 oz cheese, shredded for topping (like cheddar or colby)
    6 tablespoons low fat cream cheese

Directions

Saute the chopped onion in one tablespoon butter.
In a bowl, mix the sour cream and the cream cheese. Add 2 cans hominy, 2 cans baby limas, and the sauteed onions. Spray a small casserole dish or use a small baking dish and cover the finished dish with foil. Put the mixture in the dish. Top with shredded cheese. Bake at 350 degrees for 55 minutes. Serves 10
