Lite & Easy Asian Chicken Lettuce Wraps

Introduction

This is so tasty and easy to make - each serving is only about 67 calories

You can use olive oil in place of soy oil if you dont have any. Feel free to try other types of meat or veges in the mix and Enjoy.

Ingredients

    1 Chicken Breast chopped up in to small pieces
    2 TBS finely chopped onion
    2 cloves garlic - Finely chopped
    1 TSP Fresh Ginger
    1/4 TSP Red Pepper Flakes
    1/4 C Water chestnuts - Sliced into matchsticks
    3/4 C Zucchini - sliced into matchsticks
    3 TBS Soy Sauce
    3 TBS Teriyaki Marinade (thicker is better)
    1 TBS Soy Bean Oil
    1 TSP Sesame oil
    1/2 of a lime (Juice Only)

    ON THE SIDE
    Matchstick Carrots
    Matchstick Diakon Radish
    Cilantro Leaves
    10 Whole Romaine Lettuce Leaves

Directions

Slice all of your veges and chicken before starting

Place oils in a nonstick pan and heat for a minute - Add Garlic, Ginger and Onion and let soften for a minute
Add Chopped Chicken and cook thru - about 4 minutes
Add Water Chestnuts, Red Pepper Flakes and Zucchini = cook for about a minute
Add Soy, Teriyaki and Lime - Let this mix cook for about 2 minutes.
Remove from heat and let cool for 2-3 minutes.

Place lettuce leaf on a plate. Put about a tsp each of carrot & Diakon inside the leaf and cilantro to taste - Add a Tablespoon of the chicken mix and sprinkle with lime if desired , roll into a cigar shape and eat - YUMMY

You will never have to go to a restaurant again for lettuce wraps after you try these. Even my picky kids LOVED them and at 67 calories, 6 grams of protein and 2 grams of fat
each you can have 4-5 and not feel guilty.

Serving Size: Makes at least 10 Tablespoon servings
