Introduction

I like to add veggies to regular soups to cut down on the sodium and bump up the fiber and delicious-ocity! I like to add veggies to regular soups to cut down on the sodium and bump up the fiber and delicious-ocity!
Number of Servings: 8

Ingredients

    1 can Soup, Campbell's Select Harvest Tomato with Basil, 2 cup
    1 medium Zucchini, 200 grams
    1 medium Summer Squash
    1 medium Heirloom Tomato, 200 grams
    couple of sprays of aerodized Extra Virgin Olive Oil

    Also (optional):
    1 green onion, sliced
    Fresh basil
    Fresh oregano
    Fresh or Dried Minced Garlic
    Trader Joe's 21 Seasoning Salute (salt-free)

Directions

Begin to warm soup in a small saucepan.

*Slice the zucchini and squash into rounds, then quarter.
*In a pan, saute the green onion, add the zucchini and squash spray with EVOO, sprinkle liberally with Trader Joe's 21 Seasoning Salute and garlic.
*Once browned, slightly under-cooked before the tenderness of your liking, add the warmed soup.
*Stir and continue to heat until desired temperature.
*Near the end chop up some fresh basil and oregano and add, stir well.

If having this for dinner, give yourself 2 servings (still will feed four people).
