Quick & Easy Chicken Enchiladas for 15

Introduction

A quick, easy recipe for chicken enchiladas. A quick, easy recipe for chicken enchiladas.

Ingredients

    4 cups shredded cheddar cheese
    3 cans diced green chiles
    3 cans (+/- 25-30 oz) chicken
    2 yellow onions, diced
    30 oz enchilada sauce
    14 10'-11' flour tortillas
    jalapenos, diced *optional*
    sour cream *optional*

Directions

Preheat oven to 350 degrees.

Brown onions in small pan. In a large bowl, mix browned onions, shredded cheddar, chiles, chicken and jalapenos (if desired) thoroughly.

Spray 4 3 qt casserole dishes with non-stick spray and pour enough enchilada sauce inside to lightly cover the bottom of each.

Scoop 1-2 mixing spoons full of mixture into each tortilla. Fold closed and lay in dish on top of enchilada sauce. 4-5 should fit in each tray. Pour additional enchilada sauce on top of each tray of enchiladas. Cover with foil and bake for 35 min.
