Magic Muffin recipe with added apples and cinnamon. Can also substitute and add a ripe banana and some cinnamon and walnuts for a Banana nut version, or leave the apples and cinnamon out for the classic version. Ingredients

1 1/4 Cup All Purpose Flour
3/4 Cup Original Malt-o-Meal Dry
1/2 Cup Splenda for Baking
3/4 Cup 1% Milk
1/4 Cup Apple Sauce (unsweetened)
1 Egg
1 Tbsp Baking Powder
1/2 Tsp Salt
1 Tsp Vanilla
One small-Medium Apple, diced small or grated
1 Tsp or to taste Cinnamon
Directions
Preheat oven to 400 degrees.
In a large mixing bowl, combine all ingredients. Stir together until all ingredients are moistened.
Pour batter into greased or paper-lined muffin pans, filling cups 3/4 fill.
Bake 18-20 minutes or until center is firm to the touch.
Serving Size: Makes 12 Full Muffins (Originally I thought it only made 9 but I was thinking of when I made this recipe in half. Full recipe made 12 muffins.)
