8 cups sweet apples, quartered 6 tsp (2 tbsp) cinnamon/sugar .25 cup lemon juice 2 tsp. vanilla extract (I use imitation)
Peel, core, quarter and chop 8 cups of apples (I used six medium-sized Fujis), and put them in your slow cooker. Add cinnamon sugar, lemon juice, and vanilla extract, and give it a stir to coat apples with cinnamon/sugar. Cook on high heat for 2 hours - after this, apples should be falling apart. Stir, mash if you so desire. Cook for additional hour at reduced heat. Cool, and enjoy. Makes (roughly) seven 1/2 cup servings.
