This is the most tender beef recipe I have ever found! Because it is baked at a lower temperature, it remains very moist. It is so versatile too! Ingredients

2-3 pound eye of round
salt and pepper
olive oil
thyme
Directions
Take an Eye of Round. Add salt and pepper. Rub with olive oil, then rub on thyme.
Put on a baking rack.
Preheat your oven to 200 degrees.
Bake 20 minutes per pound, then turn off oven and leave in the oven until ready to serve. Serve with horseradish sauce on the side.
I usually serve this with steamed vegetables, fingerling potatoes and some crusty (wheat) bread.
