Thai yellow curry chicken

Ingredients

    2 jars Trader Joe's Thai Yellow Curry sauce
    1 pound boneless skinless chicken breasts
    2 cups peeled potatoes, diced
    3 cups broccoli, chopped
    1 tbsp olive oil
    3 tsp sugar
    2 tsp curry powder
    water as needed

Directions

cut up the chicken into bite-sized pleces and saute over medium-high heat in a large nonstick saucepan until just browned. Add all other ingredients except broccoli and cook until potatoes are tender,, about 15 minutes. Add broccoli and cook until tender, about another 3-5 minutes. Serve over rice or quinoa or other grain, and garnish with fresh cilantro leaves.
