Introduction

This was very easy and makes a wonderful meal! It was on my plan for the day and I changed it to make it easier. This is really delicious and is a complete meal. It is also good with 1/2 cup fruit cocktail as dessert! Very good diet food. And great for vegetarians too. This was very easy and makes a wonderful meal! Ingredients

    1 cup Minute Brown Rice, cooked
    1/2 cup black beans
    1/4 cup frozen sweet corn, thawed
    3 tablespoons reduced fat sour cream

Directions

Cook rice as directions on box say. Place on plate. Scoop beans over top. Warm up the corn and measure onto top of rice and beans. Spoon the sour cream onto the top. Eat as is, or mix together. Tortilla Chips add a nice crunch if desired. Also, salsa is good with this.

I found that this was very filling. I would almost cut it in half. It really makes you full. Also, a wonderful way to complete this meal and get your needed fruit at the same time is to finish off on 1/2 cup fruit cocktail. Enjoy! :)
