Healthy Minestrone

Introduction

This is a great soup where you can control the amount of salt.
It has lots of vegetables and you can add meat if wanted

Number of Servings: 16

Ingredients

    3 Tbsp Olive oil
    3 cloves garlic
    2 onions, chopped
    2 cups chopped celery
    5 carrots, sliced
    2 cups low sodium chicken broth
    2 cups water
    2cups of V8 juice
    1/2 cup red wine
    2 cups canned kidney beans
    1.5 cups garbanzo beans
    15 oz green beans
    2 cups baby spinach
    3 zucchinis, quartered and sliced
    1 Tbs. chopped fresh oregano
    2 Tbs. chopped fresh basil
    salt and pepper to taste
    1/2 cup barrilla multigrain pasta (bow tie or shell), cooked

Directions

In a large stock pot, heat olive oil over medium-low heat.
Saute garlic for 1-2 minutes. Add onions and saute 1-3 min.
Add carrots and celery and saute 5 minutes.
Add broth, water, V8 and wine. bring to a boil.
add the rest of the ingredients, except pasta.
let simmer for 30-40 minutes.
Place 1/2 cup of pasta in your bowl. Ladle 1.5 cups of soup over the pasta.

You can put a small sprinkle of Parmesan cheese over the soup. Serve with a good crusty bread ( not included in nutrition information.)
