Cajun Watermelon Relish

Ingredients

    2 Cups Watermelon Rinds
    1 Cup Water
    1 Tbsn pickling salt
    1/2 tsp pickling spice
    1 Cup vinegar
    1/2 Cup Sugar
    1 1/2 Cup Sweet peppers (assorted red, yellow, green)
    1 Cup Chopped onion
    1 jalapeno

Directions

Diced rind. Measure 2 cups.Place in a large bowl. Combine water and salt. Pour over rind, cover and refrigerate for at least 8 hours. Pour rind into a colander, rinse under cold water and drain well. In a large pan, combine spice, vinegar and sugar. heat to boiling. Stir in watermelon, peppers, onion and jalapeno. Return to boiling., reduce heat , cover and simmer for 25 min. Pack hot relish into sterilized jars. Makes 3 half-pint jars. 50 portions of 1 tbsp.
