Chocolate Biscotti

Ingredients

    2 cups flour
    1 cup sugar
    1/3 cup cocoa
    1 tsp. baking soda
    1/2 tsp salt
    1/4 cup mini-chocolate chips
    2 large eggs
    2 egg whites
    2tsp. grated orange peel
    1 tsp vanilla
    1 tsp. instant coffee

    Glaze: 1 egg white whisked with 1 tsp. water.

Directions

Preheat the oven to 350 degrees. Spray a large baking sheet with PAM. In a large bowl, whisk together the first 5 ingredients and then stir in the chocolate chips. In a separate bowl, whisk together the next 5 ingredients until coffee is dissolved. Add wet ingredients to the dry ingredients and stir to make a sticky dough. With floured hands, on a floured board, roll into 2 14 inch ropes. Place the ropes on baking sheet, 6 inches apart, and flatten each to about 1-3/4 inches wide loafette. Glaze these with glaze and bake for 25 minutes until firm to the touch. Remove from the oven but leave oven on. Cool on the sheet for 2 min. and then slide onto cutting board. With a serrated knife, slice into 1/2 inch slices, discarding the ends. Place on their sides ont eh baking sheet (they can touch) and bake 7 minutes, turn and bake 8 minutes. Cool completely on a wire rack and store in an airtight container for up to 1 week.
