Pasta with Mushrooms and Spinach

Ingredients

Whole Grain Penne, 8 oz
Olive Oil, 1 tbsp
Mushrooms, fresh, 2 C
Onions, raw, 1 large
Garlic, 4 cloves
dried thyme, 1/2 t
Spinach, fresh, 8 C
Parmesan Cheese, grated, 1/3 C
Turkey, Ground turkey, 93% lean, ~1/2 C
Directions
**Instructions do not reflect the added ground turkey**
1. Cook pasta according to package directions. Drain well.
2. Meanwhile, in a very large skillet heat oil over medium heat. Add mushrooms, onion, and garlic; cook for 2 to 3 minutes or until mushrooms are nearly tender, stirring occasionally. Stir in thyme. Gradually add spinach, cooking and tossing about 1 minute or until heated through and spinach is slightly wilted.
3. Stir cooked pasta into spinach mixture; toss gently to combine. Sprinkle with cheese to serve.
**EXTRA 4. Season ground turkey & brown in skillet. Add to pasta and mushroom mixture for added protein**
