Snappy's Mac and Cheese

Introduction

An adapted version of Fanny Farmer's classic recipe. Definitely not bland or boring! An adapted version of Fanny Farmer's classic recipe. Definitely not bland or boring!
Number of Servings: 12

Ingredients

    13 oz box of whole wheat pasta (any kind will do)
    3 T butter
    4 T whole wheat flour
    2 cups of fat free keifer (or 1 cup skim milk and 1 cup plain non fat yogurt)
    1 8z pkg of 2% Mexican blend cheese
    1 tsp salt
    1 tsp pepper
    1 tsp dry mustard
    1/2 tsp zatarain's creole seasoning (optional)

Directions

Boil pasta according to directions until tender.
In a separate pot, heat up 3 T butter until melted.
Once butter is melted, stir in 4 T of flour and stir until it makes a thick roux.
Slowly add 2 cups of keifer (or milk and yogurt) and stir until all is combined.
Add salt, pepper, mustard, and seasonings.
Heat until a low boil for 2 minutes.
Remove from heat.
Drain noodles and transfer to a baking dish. (Sprayed with non stick spray if desired)
Pour cheese sauce over the top and gentle stir with a spoon to cover all the noodles.
Bake at 350 for 15 minutes
Makes 8 servings
