German Pancake (low calorie version)
Submitted by: SHAWNDYKIntroduction
This is a wonderful recipe if you're on a low carb diet, but I'm working on lowering my calories too, so I modified it a bit to bring the numbers down. This is a wonderful recipe if you're on a low carb diet, but I'm working on lowering my calories too, so I modified it a bit to bring the numbers down.Number of Servings: 8
Ingredients
-
1.5 cups egg substitute
1 cup 1% milk
1 cup all-purpose flour
1/3 cup sugar
1/2 teaspoon salt
2 tablespoons I can't believe it's not Butter Lite Spread
1 tablespoons confectioners' sugar, for dusting
Directions
1. Heat oven to 400°F. Whisk together egg substitute, milk, flour, sugar and salt in large bowl.
2. Melt spread in oven-proof skillet, preferably 10-inch cast-iron pan, over medium heat. Using a pot holder, remove skillet from heat. Pour egg mixture into hot skillet.
3. Carefully transfer hot skillet to 400°F oven and bake for 20 minutes or until pancake is golden and puffed.
4. Sift confectioners' sugar over top of pancake and serve immediately.
*Note: The first time I had this it also had fresh lemon squeezed on top - now I can't imagine it another way!
