Blueberry and Zuchhini Bars

Ingredients

1 large egg white
1 C applesauce
1 TBSP vanilla extract
2 C all-purpose flour
1 C whole wheat flour
1 tsp salt
1 tsp baking powder
1/2 tsp baking soda
1 TBSP cinnamon
2 C grated zucchini
1 pint blueberries
Directions
Spray 2- 8x8 baking dishes with cooking spray.
Preheat over to 350F.
In a large mixing bowl, whisk wet ingredients together.
In a separate mixing bowl, mix flour, wheat flour, salt, baking powder, baking soda, cinnamon.
Add the dry mixture to the wet mixture. Stir until combined.
Gently fold blueberries and zucchini into mixture.
Divide equally between the two baking dishes.
Bake 35-40 mins, until a toothpick inserted in the middle comes out clean.
Let cool 15 mins before cutting each dish into 12 bars.
Serve warm or at room temperature.
