Grilled veggies with penne

Ingredients

    1 lb Penne Pasta, cooked and warm
    2 pints grape tomatoes
    ⅓ cup olive oil, divided
    Salt and Pepper
    1 med eggplant
    2 medium red onions
    2 medium zucchini
    1 large red bell pepper
    1 t Mrs Dash
    1 container balled fresh mozzarella
    ⅓ cup fresh basil

Directions

Place tomatoes on a double thickness of foil. Drizzle with oil. Season with salt and pepper and placed on greased grate on grill. Cut onion and eggplant in slices. Cut zucchini in half lengthwise. Cut pepper in large chunks. Spray with oil and season with Mrs Dash and salt and pepper. Grill about 5 minutes until tender crisp and grill marked. Cut vegetables into smaller pieces and toss with hot pasta and tomatoes in a large pasta bowl. If pasta seems too dry add some reserved pasta water. Add cheese and toss again. Garnish with basil leaves and serve.
