Number of Servings: 4

Ingredients

    2 tbsp olive oil
    2 lbs veal for stewing
    2 med onion finely chopped
    4 cloves garlic clove, minced
    1 tbsp caraway seeds
    1 tbsp black pepper
    1 lb mushrooms coarsely chopped
    2 tbsp flour
    1 can tomato, diced
    1 cup low-sodium chicken broth
    1 tbsp paprika
2 med red bell pepper, cut into chunks
    1/2 cup dill weed

Directions

1. 1. Heat 1 tbsp of oil in large skillet over medium-high heat 30 seconds. Add veal in batches and cook, stirring, 5 minutes per batch, or until browned. Transfer to 5 quart or larger slow cooker using slotted spoon.

2. 2. Reduce heat to medium. Add onions to skillet and cook, stirring, 3 minutes, or until softened. Add garlic, caraway seeds and peppercorn, cook, stirring, 1 minute. Add mushrooms and toss to coat. Add flour and cook stirring 1 minute. Add tomatoes with juice, broth and bring to boil. Transfer to cooker. Stir well.

3. 3. Cover. Cook on low 8 hours or on high 4 hours, or until veal is tender. Dissolve paprika in water. Add paprika mixture to cooker and stir. Add bell peppers and stir well. Cover and cook on high 30 minutes longer, or until peppers are tender. Top each serving with dill and dollop with sour cream (optional).
Serve over egg noodles.
