Potato, raw, 6 cup diced
Water, tap, 5 cup (8 fl oz)
Velveeta Cheese Spread, 2 oz
Bacon, 17 medium slices, cooked
Milk, canned, evaporated, nonfat, 12 fl oz
Margarine, 3 tsp
Onions, raw, 1 medium (2-1/2" dia)
Put onion in food processor-process well
Put onion and potatoes in large pot and barely cover with water
Cook on high, covered, until boiling.
While waiting, cook bacon
Drop flame down to low and let simmer for 10 min.
Use a wisk and break up potatoes after the 10 min.
Add the butter, cheese, evaporated milk, and bacon
Keep simmering until the cheese melts, stirring occasionally.
Serving Size: Makes about six 2 cup servings
