    1 cup chopped onion
    3 garlic cloves, minced
    1 tbsp olive oil
    2 cups chopped kale
    1 14.5 oz can diced tomatoes
    1 15 oz can white beans, rinsed
    2 qts vegetable broth
    2/3 cup whole wheat rotini
    red pepper flakes

    Saute onion and garlic in olive oil. Add kale, tomatoes, white beans, broth, rotini, and red pepper flakes. Cook until pasta and kale are tender.


Serving Size: makes 6 1-1/2-cup servings
