Ingredients

    3 bananas
    1 cup sugar
    1 tsp each baking powder, soda and salt
    1 tsp vanilla
    2 eggs
    1 cup unbleached flour
    1 cup whole wheat or white wheat flour
    6 tbsp hot water

Directions

mash bananas with 1/2 cup of the sugar. Add 1/2 cup sugar, 2 beaten eggs and combine. Sift flours and leavening and add with water and vanilla and stir just until combined. Pour into loaf pan and bake at 350 degrees, until toothpick comes out clean.
