DELICIOUS as a side dish or dessert! This is closer to a thick corn pudding than an actual bread or cake. Ingredients

    2/3 cup all-purpose flour
    1/2 cup yellow corn meal
    3 Tbsp. sugar
    1 Tbsp. baking powder
    1/4 tsp. salt
    2 Tbsp. vegetable oil (canola)
    1/4 cup butter, melted
    1/4 cup water
    1 (15-oz) can cream-style corn

    (The first six ingredients take the place of a corn muffin mix, such as Jiffy. If you'd like an easier recipe, just use the mix and omit the first six ingredients.)

Directions

In bowl, combine first 5 ingredients. Add oil and melted butter and combine. Add water and creamed corn. Mix until well combined.

Pour mixture into a 9x5" loaf pan.

Bake, uncovered, at 350-degrees for 40-45 minutes or until liquid has been absorbed.

Use an ice cream scoop to serve sweet corn cake as a side dish or for dessert. Enjoy!
