Introduction

Satisfies that cheese steak craving without the steak! Great for using up leftover chicken or a roasted one from the supermarket. Satisfies that cheese steak craving without the steak! Great for using up leftover chicken or a roasted one from the supermarket.
Number of Servings: 4

Ingredients

    1 cup white meat from a supermarket roasted chicken, or just some leftover chicken
    1 cup chopped onion
    1 cup sliced mushrooms
    Olive oil spray
    4 slices of 2% American cheese
    4 whole wheat or high fiber tortillas (I use Giant Eagle brand high fiber wraps)
    4 tbsp Kraft Olive Oil Mayo

    *optional: lettuce, tomatoes, red onion, etc.

Directions

Saute onions and mushrooms until soft and brown using olive oil spray
Add chicken (chunks or shredded) and season to taste
Continue cooking and mixing on low until heated through
Set mixture aside and respray pan with olive oil
On a separate plate, spread 1/4 chicken and veggies on one half of a wrap
Add cheese and fold over
Cook quesadilla over medium-high heat for 2-2.5 minutes on each side, until browned
Remove from heat, add mayo and additional fixings.
Enjoy!
