Introduction

This is my adaptation of a recipe that I found at tammysrecipes.com. It's a family favorite because it tastes great. It's my favorite because it's quick to prepare, filling, and relatively inexpensive.

Number of Servings: 6

Ingredients

    2 cups of canned or precooked Great Northern beans
    2 boneless, skinless chicken breasts, cooked and diced
    1 cup medium salsa
    1 cup canned sweet corn
    1 cup sweet mexican or vidalia onion, chopped
    2 cups shredded 2% or low-fat Monterey Jack cheese
    salt, pepper, and cumin, to taste -I guessed on my measurements. You'll probably want more salt

Directions

Add everything except cheese to saucepan. Add enough water to cover. Cook over medium heat until hot. After heated through, stir in cheese and continue to heat until cheese is melted
