Breakfast Omelet Muffins

Introduction

Great way to make ahead and just throw in the microwave for a quick breakfast! Recipe fills 2 muffin trays with 12 muffins in each tray. Great way to make ahead and just throw in the microwave for a quick breakfast! Recipe fills 2 muffin trays with 12 muffins in each tray.
Number of Servings: 12

Ingredients

    1 diced red pepper
    6 medium diced mushrooms
    1.5 cups of fresh spinach
    4 slices of bacon (crumbled)
    2 sausage patties chopped
    4 turkey sausage links cut up
    1 cup of shredded cheese
    .25 tsp garlic salt
    .5tsp Fresh Ground Black Pepper

Directions

Pre-heat oven to 350. Dice all ingredients and place in separate containers. Mix eggs together with spices. Spray non-fat cooking spray into muffin pans. Fill muffin pans 1/2 way with eggs, then add a sprinkle of shredded cheese (save some for the tops of the muffins). Layer the remainder of ingredients over each muffin. Lastly, add the remainder of the cheese over the muffins.
Bake for approximately 30 mins or until the eggs are set. Once they are cooled, place in a plastic bag and put into the fridge to eat when ready! :)
