Caramel Apple Salad

Ingredients

    1 (sm) box regular instant butterscotch pudding (powder)
    6 oz crushed pineapple (8 oz can, slighly drained)
    3 oz (84 grams or 3/4 cup) lighly salted dry roasted peanuts
    8 oz fat-free coolwhip
    1 lb (2 large, 3 medium, 4 small) granny smith apples

Directions

1) In mixing bowl, combined pudding powder and slightly drained crushed pineapple.

2) Add 2 oz (1/2 cup) nuts, and one pound of diced or cut up apples (wash, core, and cut into bite-size or smaller pieces). Stir well.

3) Fold in whip topping. Refrigerate or serve immediately.

4) Garnish with 1/4 cup peanuts when served.



Serving Size: Makes 8 (4.75 oz) servings
