Mexican Casserole (1/8 of 13x9 pan)

Introduction

Casual casserole with beans & chicken on a crushed-tortilla chip crust (adapted from a recipe by Parade, for my family's logging purposes) Casual casserole with beans & chicken on a crushed-tortilla chip crust (adapted from a recipe by Parade, for my family's logging purposes)
Number of Servings: 8

Ingredients

    1 1/2 cup crushed tortilla chips (reduced-fat, ~4 oz)
    1 can garbanzo beans
    1 can black beans
    1 8 oz can tomato sauce
    1 cup salsa
    1 lb shredded chicken (I used 2 breasts + 1 thigh from a skinned rotisserie chicken and estimated this at 12 oz breast, 4 oz thigh)
    1 can corn (I threw in a partial bag of corn from my freezer)
    1/4 c chopped cilantro
    1 c chopped red onion
    12 oz shredded reduced-fat Mexican cheese blend
    1 Tbsp minced garlic
    salt & pepper to taste

Directions

Crush tortilla chips, place at bottom of 13x9 pan coated with cooking spray.
Mix: chicken, beans, corn, tomato sauce, salsa, onion, cilantro, garlic & salt + pepper to taste.
Layer 1: half of the chicken mix
Layer 2: half the cheese
Layer 3: the other half of the chicken mix
Layer 4: the remainder of the cheese
Bake at 350 for 30 minutes, let stand 5 minutes before cutting

Serving Size: Makes 8 servings (1/8 of a 13 x 9 pan)
