Peperonata Rustica

Ingredients

    1/4 cup olive oil
    2 large onions, thinly sliced
    3 large sweet peppers, thinly sliced
    1 fresh rosemary sprig
    1 Sprig Thyme
    1 Sprig Basil
    Salt and Pepper to taste
    1 small hot pepper to taste (make a slit in it and add whole) (Optional)

Directions

Cook onion, peppers (not the hot one), rosemary and thyme for about 40 minutes on Medium low until peppers and unions are soft and tender but not mushy. About halfway thru, add basil and hot pepper. Check flavor and remove hot pepper when it is spicy enough for your liking. Salt and pepper to taste, serve hot warm or cold with crackers, in wraps, on pizza or with cut cold veggies.
