Spicy Black Bean Quinoa

Ingredients

    2.5 cups Ancient Harvest Traditional Whole Grain Quinoa
    2 cans black beans, drained and rinsed
    1 can Del Monte Petite Cut Diced Tomatoes
    1 can RoTel Diced Tomatoes & Green Chilies
    1 medium onion, diced

Directions

Cook quinoa according to directions on package.

Spray skillet with non-stick spray. Sautee onion until tender. add black beans, RoTel and Tomatoes and cook until reduced. Add quinoa and mix well. Serve warm.

Makes 10 1-cup servings.
