Introduction

Cooked brown rice with walnut pieces and dried cranberries. Cooked brown rice with walnut pieces and dried cranberries.
Number of Servings: 2

Ingredients

    1 cup of cooked brown rice
    1 T butter
    1/4 cup of chicken or beef broth
    1/4 cup of dried cranberries
    About 7 walnut halves, chopped

Directions

I cook rice in a rice cooker at the beginning of the week so I have rice readily available.

Melt butter in a small skillet and add rice. Stir until well coated. Add cranberries, walnuts, and finally, the broth. Stir until broth is absorbed and rice is heated through.

Season to taste.

Serving Size: Makes 2-1/2 cup servings
