Paleo/Primal Cabbage Rolls

Ingredients

2 pounds ground pork
3 pounds ground beef
1 onion, diced
1 pound carrot, grated
1 head savoy cabbage
1 tbsp sea salt
1 tbsp black pepper
3 large cans unsalted tomato sauce (approximately 8 cups sauce)
Directions
First thing you need to do is to steam the cabbage. I take out the core of the cabbage then drop the entire head into boiling water for a few minutes. Then using tongs, I carefully peel off the leaves one by one into a colander sitting inside a bowl to catch the water.
Combine all ingredients except the cabbage and the sauce.
Preheat oven to 350 degrees. Using a large oven roasting pan I dump one of the large cans of sauce into the bottom (1/3 of the sauce).
Next, start rolling... lay out a leaf, spoon some of the meat mixture into the centre of a leaf. Roll like a burrito. Tuck the sides in and roll. Place seam side down into the pan. Repeat until all your filling or cabbage is used up. Make sure you cover each layer of rolls with sauce, then cover completely with sauce when you have finished rolling.
Cover and bake for 1 1/2 - 2 hours.
