Spinach Lasagna Rolls

Spinach Lasagna Rolls

Ingredients

    4 Lasagna Noodles
    5oz. Spinach, frozen
    7.5oz. Ricotta Cheese, fat-free
    1/4c. Parmesan Cheese, grated
    1 Egg
    1/8tsp. Salt
    1/8tsp. Pepper
    16oz. Tomato Sauce
    4.5tbsp. Mozzarella Cheese

Directions

Boil water and cook lasagna noodles. Combine spinach, ricotta, Parmesan, eggs, salt and pepper in a medium bowl. Ladle about 1 cup sauce on the bottom indicated number of deep dish 8x8 pans.

Place a piece of wax paper on the counter and lay out lasagna noodles. Make sure noodles are dry. Take 1/3 cup of ricotta mixture and spread evenly over noodle. Roll carefully and place seam side down onto the baking dish. Repeat with remaining noodles.

Ladle sauce over the noodles in the baking dishes and top each one with 1 tbsp mozzarella cheese. Cover foil, label and freeze. To serve: Thaw. Leave foil on and bake for 40 minutes, or until cheese melts.

Serving Size: Makes 4 rolls, 1 serving = 1 roll
