Introduction

desert, can use raisins instead of cranberries, can add 4 tablespoons of Granmarnier, 2 tablesppons of orange zest
for a grown up version with more calores,

Number of Servings: 12

Ingredients

    1 cuo uncooked long grained brown rice
    1 1/4 cups liquid egg white
    1 cup granulated splenda
    2 tsp vanilla extract
    1 quart fat free milk (lactaid)
    1/3 cup dried sweetened cranberries

Directions

XCook the rice according to package directions
Preheat oven to 325 F
spray a largde baking dish with olive ioil spray
In a alrge bowl lightly beat egg whies, Add splenda, vanilla,
cinnamon and milk. Mix thoroughly,
Spread the rice evenly on the bottom of the sprayed dish,
Sprinkle the cnraberries evenly over the rice, Pour the egg-milk mixture over the rice and cranberries.
Bake @ 325 for 50 or 60 minutes until set.
Serve hot or cold., I like it best warm.
