Introductionthis happenned by accident.. but I love it! this happenned by accident.. but I love it!
1 1/3 Cups of frozen gumbo vegetables
1 can of Delmonte Mexican style stewed tomatoes
1 chicken boulion cube
3 oz water
9 ounces or so leftover chicken
1/2 C brown rice, cooked with 1 C water
ground red pepper, to taste
In heavy skillet place frozen vegetables and turn on heat to meduim high. Add stewed tomatoes, chopping up to smaller pieces. Then add the boulion cube and water and stir. Add the chicken and cook on medium for 15 minutes to blend flavors.
Serve with the rice.
Serving Size: 1/3 of the recipe.
