Introduction

This is a simple meal to toss together, but it is tasty and satisfying. Ingredients

    3 Boneless skinless chicken breasts - cooked and cut into bite-sized chunks
    1 Box Near East Roasted Garlic Couscous - prepared
    1 Cup broccoli florets - steamed
    1 Cup chopped cauliflower florets - steamed
    1 Cup crumbled feta cheese

    Dressing:
    1/2 cup canola oil
    2 Tbs red wine vinegar
    1 Tbs Italian seasoning
    1 tsp Lemon Pepper seasoning
    1 tsp Garlic Powder
    1 Tbs fresh lemon juice
    1/2 tsp garlic salt

Directions

Combine dressing ingredients and mix well. Let sit for a few minutes so that spices have a chance to reconsititue.

Combine prepared couscous, chicken, steamed vegetables, and feta cheese. Mix gently. Pour dressing over the mixture and stir well.

Serving Size: Makes 8 2-cup servings
