Vitamix Vegan No Grain Granola Bars

Introduction

Number of Servings: 36

Ingredients

    4 Carrots
    1 Pear
    1 Cup Raisins or Golden Raisins
    1 Cup Dried Pitted Prunes
    1/2 Cup Coconut Oil
    1 TBSP Maple Syrup (optional)
    1 TBSP Vanilla Extract
    Water, juice, coconut milk, etc. to achieve blendability
    1 Cup Flax Seeds or Ground Flax
    1 Cup Finely Grated Coconut
    1 Cup Shredded Coconut
    1 Cup Sunflower Seeds

Directions

Preheat oven to 300║ F. Line a 13 x 9 pan with parchment paper and grease with coconut oil.

Blend carrots, pear, raisins, and prunes with enough liquid to accommodate 4 cups of dry ingredients. Blend in coconut oil, maple syrup and vanilla extract.

Pour half of liquid into a large bowl, add dry ingredients, pour remainder of liquid over and stir. Pour mixture into pan, pressing down.

Bake for 60 minutes. Allow to cool in pan. Remove from pan with parchment paper. Cut on cutting board into thirds, lengthwise. Cut each third into twelve bars. Place on cookie sheets and return to oven for half hour, if necessary to remove excess moisture. Cool.

Wrap individually in waxed paper. Place into FreezerMate. Store in the freezer.
