Mediterranean Chicken Bake

Introduction

Great served with pasta or a piece of crusty bread.

Number of Servings: 4

Ingredients

    2 cups (400g) Canned Tomatoes
    1/2 cup Tomato Paste
    2 Peppers, sweet, red sliced
    3 cups sliced Zucchini
    8 Chicken Thighs, skinless
    1/2 cup Black Olives cut in half
    1 cup sliced Onions, raw
    1/2 cup White Wine
    1/2 tablespoon dried Oregano
    1/2 tablespoon dried Basil
    1/2 tablespoon dried Parsley
    1/2 tsp Black Pepper freshly ground
    1 teaspoon Granulated Sugar, 1 tsp
    2 cloves Garlic, crushed

Directions

Spray skillet with some canola spray and saute the chicken pieces until brown, remove and place into a casserole dish. Saute the onion and garlic for a few minutes, add the rest of the ingredients and saute for approximately 10 minutes. Pour on top of the chicken pieces and cook at 350 degrees F (180 decrees C) for approximately 90 minutes or until chicken is cooked and vegetables are tender.

Serve with either pasta or crusty bread.

Serving Size: 2 pieces of chicken plus @ 1 1/2 cup of sauce
