Introduction

Carb-free, sugar-free dessert.... very good to satisfy your sweet tooth when living the low-carb lifestyle! Nutrients are figured with the blueberries, but they're optional. Carb-free, sugar-free dessert.... very good to satisfy your sweet tooth when living the low-carb lifestyle! Nutrients are figured with the blueberries, but they're optional.
Number of Servings: 12

Ingredients

    2 8-oz packages Philadelphia Cream Cheese 1/3 Less Fat, room temp
    Slightly less than 1/2 cup Erythritol (or other bulk sweetener)
    Pure Stevia to taste
    2 eggs
    1/2 tsp vanilla or almond extract
    cinnamon
    blueberries (optional)

Directions

Set oven for 350. Soften cream cheese for about 40 seconds in microwave if not already room temp. Add other ingredients (can mix cinnamon in the batter if you like). Beat with mixer on low to medium until smooth. Mix in blueberries if desired. Pour into 12 muffin pans lined with paper (very difficult to remove and eat if papers not used!) Bake at 350 for 18 minutes, then turn off oven, open door, and let sit for one hour (very important step-- allows muffins to "set" more without overcooking). Sprinkle with cinnamon if desired, and let cool.
