Chicken Diane with Mushrooms

Introduction

I'm always looking for new ways to serve chicken breasts! I took this recipe from another website, then added the mushrooms and adjusted it to make it lower in fat and sodium. Number of Servings: 4

Ingredients

    Chicken Breast, no skin, 2 breast, bone and skin removed
    Olive Oil, 1 tbsp
    Lime Juice, 1/2 lime
    Dijon Mustard, 2 tsp
    Chicken Broth, low sodium, 1/4 Cup
    Pepper, black, .5 tsp
    Fresh Chives, 3 tbsp chopped
    Fresh Parsley, 3 tbsp
    Smart Balance Buttery Spread, 2 tbsp
    Portabella mushrooms, chopped, about 1 Cup
    Brandy 2 tablespoons

Directions

Place chicken breast halves between wax paper and pound slightly with mallet. Sprinkle each with pepper (and salt, if you're not worrying about sodium content). Heat 1 Tbsp of the Smart Balance and the oil in large skillet. Cook chicken over high heat 4 minutes each side, then transfer to serving platter. Add the mushrooms to the pan and saute for about 5 minutes. Add the chives, lime juice, brandy parsley and mustard to the pan and stir constantly for a few seconds, then add the broth. Stir until smooth, then stir in the remaining Smart Balance. Pour over the chicken and serve immediately.

Serving Size: Makes 4 servings of 1/2 breast each
