Chicken Broccoli Cheddar Soup

Introduction

I love cheddar soup but my favorite easy one has too much salt. This is a variation to lower the salt. I love cheddar soup but my favorite easy one has too much salt. This is a variation to lower the salt.
Number of Servings: 20

Ingredients

    14 cups water
    3 chicken breast (boneless skinless), frozen
    1 cup carrots
    1/4 large red onion (about 1/2 cup chopped)
    1 cup Celery chopped
    4 to 5 Red Potatoes sliced thin.
    1/4 cup barley
    1 package Bear Creek Cheddar Broccoli Soup
    1 package California Style Vegetables.

Directions

Place 14 cups water into a large pot.
Slice frozen chicken into chunks and put in the water.
place carrots, celery, and onion into food processor and chop very tiny and put in the water
Slice potatoes thin and place in water
add the barley. Bring to a boil and cook until vegetables are soft and Chicken is fully cooked. Add the Cheddar broccoli soup and California Vegetables. Stir and simmer for about 5 or so minutes until incorporated into soup. It should thicken only a little. Makes about 3 quarts.

Serving Size: Makes 20 1 cup servings.
